6 large eggs

1 cup zucchini, diced

1 cup cherry tomatoes, halved

1 cup sharp cheddar cheese, shredded

1 small onion, diced

2 cloves garlic, minced

1/4 cup milk

2 tablespoons olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried oregano

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 2-3 minutes until it becomes translucent. Add in the minced garlic and cook for another minute until fragrant.

      Add Zucchini and Tomatoes: Stir in the diced zucchini and halved cherry tomatoes. Season with salt, pepper, and oregano. Sauté for 5-7 minutes until the zucchini is tender and the tomatoes begin to soften.

        Prepare the Egg Mixture: In a mixing bowl, whisk together the eggs and milk until well combined. Then stir in the shredded cheddar cheese.

          Combine and Cook: Pour the egg mixture over the sautéed vegetables in the skillet. Let it cook on the stovetop for about 2-3 minutes, gently swirling with a spatula to ensure even cooking.
