4 large whole wheat tortillas

1 medium zucchini, thinly sliced

2 cups fresh baby spinach

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Cooking spray or additional olive oil for grilling

Sauté the Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced zucchini and spinach, cooking until zucchini is tender and spinach is wilted, about 3-4 minutes. Season with salt, pepper, and dried oregano. If desired, sprinkle in red pepper flakes for a little heat. Remove from heat and set aside.

    Assemble the Wraps: Lay out each tortilla on a flat surface. Divide the sautéed zucchini and spinach mixture evenly among the tortillas, leaving a small border around the edges. Top each with a sprinkle of shredded mozzarella and crumbled feta.

      Fold and Secure: Carefully fold the sides of each tortilla over the filling and then roll it up tightly from the bottom to the top, similar to a burrito.

        Grill the Wraps: Heat a non-stick skillet over medium heat and lightly grease it with cooking spray or a drizzle of olive oil. Place each wrap seam-side down in the skillet. Grill for about 3-4 minutes, or until golden brown and crispy, then carefully flip and grill the other side for another 3-4 minutes.

          Serve: Once the wraps are nicely browned and the cheese has melted, remove from the skillet. Let them cool slightly before slicing in half. Serve warm with your favorite dipping sauces or a side salad.
