2 medium zucchinis

4 slices of bread (sourdough or whole grain recommended)

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (plus extra for dipping)

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning (or a mix of oregano, basil, and thyme)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Slice the zucchinis into thin, round slices (about 1/4 inch thick). Sprinkle them with salt and let them sit in a colander for about 10 minutes to draw out excess moisture. This will help prevent your grilled cheese from becoming soggy.

    Cook the Zucchini: In a skillet over medium heat, add olive oil and heat until shimmering. Pat the zucchini slices dry with a paper towel to remove excess moisture and add them to the skillet. Cook for about 3-4 minutes on each side or until they are tender and slightly golden. Season with salt, pepper, and Italian seasoning. Remove from heat and set aside.

      Assemble the Sandwiches: On one slice of bread, spread a layer of marinara sauce, then sprinkle with mozzarella and Parmesan cheese. Top with a few cooked zucchini slices, then add another layer of cheese before covering with a second slice of bread. Repeat for the second sandwich.

        Grill the Sandwiches: In the same skillet, reduce the heat to medium-low. Add the assembled sandwiches and cook for about 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted and gooey. You may need to cover the skillet with a lid to help the cheese melt.
