Zucchini Pita Pockets

2 medium zucchinis, grated

1 cup cherry tomatoes, quartered

1/2 cup red onion, finely chopped

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper, to taste

4 whole wheat pitas

1 cup hummus (store-bought or homemade)

Extra virgin olive oil, for drizzling

Prep the Zucchini: In a large bowl, toss the grated zucchini with 1/2 teaspoon salt and let it sit for about 10 minutes. This will draw out excess moisture. After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove as much water as possible.

    Mix the Filling: In the same bowl, combine the drained zucchini, cherry tomatoes, red onion, feta cheese, parsley, garlic powder, oregano, salt, and pepper. Mix until well combined. Taste and adjust seasoning if necessary.
