2 medium zucchinis, spiralized into noodles

1 lb (450g) boneless, skinless chicken breast

2 tablespoons olive oil, divided

Salt and pepper, to taste

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup Caesar dressing (store-bought or homemade)

Optional: croutons for topping

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper. In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the chicken breasts and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove from heat, let it rest for a few minutes, then slice into strips.

    Cook the Zucchini Noodles: In the same skillet, add the remaining tablespoon of olive oil. Sauté the spiralized zucchini noodles for 2-3 minutes until tender but still slightly crisp. Season with additional salt and pepper if desired. Remove from heat.
