Ingredients

For the Meatballs:

1 pound ground turkey (or beef)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

1 egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Skewers:

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 small red onion, cut into wedges

1 cup whole cherry tomatoes

Olive oil (for drizzling)

Skewers (metal or soaked wooden skewers)

Instructions

Preheat the Oven:

    - Preheat your oven to 400°F (200°C).

      Prepare the Meatball Mixture:

        - In a large mixing bowl, combine the ground turkey, grated zucchini, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix until well combined.

          Form the Meatballs:

            - Using your hands, form the mixture into bite-sized meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

              Bake the Meatballs:

                - Bake the meatballs in the preheated oven for about 20 minutes, or until they are cooked through and golden brown.

                  Prepare the Skewers:

                    - While the meatballs are baking, prepare your skewers. Thread the meatballs onto the skewers, alternating with chunks of red and yellow bell peppers, red onion wedges, and cherry tomatoes. Leave some space between each ingredient for even cooking.

                      Drizzle with Olive Oil:

                        - Lightly drizzle the assembled skewers with olive oil and sprinkle with a pinch of salt and pepper.

                          Grill the Skewers (optional):

                            - If desired, you can finish the skewers on a grill. Preheat the grill to medium heat and grill the skewers for about 5-7 minutes, turning occasionally until the vegetables are tender and slightly charred.

                              Serve:

                                - Serve the zucchini meatball skewers warm with your favorite dipping sauce (such as marinara, tzatziki, or garlic aioli) on the side.
