2 medium zucchinis, grated

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

2 cups shredded sharp cheddar cheese

1 cup milk (or plant-based alternative)

1/4 cup cream cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole grain)

Salt to taste

Fresh parsley, chopped for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

    Prepare the Zucchini: While the pasta is cooking, grate the zucchinis using a box grater. Transfer the grated zucchini to a clean kitchen towel and squeeze out excess water to avoid a watery dish.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for about 1 minute until fragrant.

        Combine Zucchini and Spices: Add the grated zucchini to the skillet. Sprinkle in the smoked paprika, black pepper, cayenne pepper (if using), and salt to taste. Sauté for about 5 minutes until the zucchini is tender and any remaining moisture has evaporated.

          Make the Cheese Sauce: In a separate saucepan, heat the milk over medium heat. Once warm, whisk in the cream cheese until smooth. Gradually add in the shredded cheddar cheese, stirring until melted and creamy. If the sauce is too thick, add a little more milk to reach the desired consistency.
