Zucchini Fritters with Garlic Aioli

2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 large egg

1/2 cup grated Parmesan cheese (or vegan alternative)

1/4 cup chopped fresh parsley (or dill)

3 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon baking powder

Olive oil, for frying

For the Garlic Aioli:

1/2 cup mayonnaise (or vegan mayo)

1 clove garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Prepare the Zucchini:

    Grate the zucchinis and place them in a colander. Sprinkle with salt and let sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel to squeeze out remaining liquid from the zucchini.

      Mix the Fritter Batter:

        In a large mixing bowl, combine the grated zucchini, flour, egg, Parmesan cheese, parsley, green onions, minced garlic, black pepper, and baking powder. Mix until well combined.

          Form Fritters:

            Take a small amount of the mixture (about 2 tablespoons) and form it into a patty. Repeat for the rest of the mixture, placing the fritters on a parchment-lined tray.

              Heat the Oil:

                In a large skillet, heat about 1/4 inch of olive oil over medium heat. Once the oil is hot, carefully place the fritters in the skillet, making sure not to overcrowd the pan.

                  Fry Until Golden:

                    Cook for 3-4 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer them to a paper towel-lined plate to drain any excess oil.
