2 medium zucchinis, grated

1 cup corn kernels (fresh or frozen, thawed)

3/4 cup crumbled feta cheese

1/2 cup all-purpose flour

2 large eggs

1/4 cup green onions, finely chopped

2 cloves garlic, minced

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon dried oregano

1/2 teaspoon smoked paprika

Cooking oil (for frying)

Mini slider buns

Fresh arugula or spinach (for serving)

Tzatziki sauce or avocado sauce (for topping, optional)

Instructions
 

Prepare the Zucchini: Start by grating the zucchinis. Place the grated zucchini in a clean kitchen towel and press out excess moisture. This step is crucial to ensure your fritters are not soggy.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, corn kernels, crumbled feta, flour, eggs, green onions, minced garlic, baking powder, salt, pepper, oregano, and smoked paprika. Stir until well combined.

      Heat Oil: In a large non-stick skillet, add about 1 tablespoon of cooking oil and heat it over medium heat. You may need more oil as you cook the fritters, so have it ready.
