Zucchini Chickpea Nuggets

2 medium zucchinis, grated

1 can (15 oz) chickpeas, drained and rinsed

1/2 cup rolled oats

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan version)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper to taste

1/4 cup all-purpose flour (or chickpea flour for gluten-free)

2 tablespoons olive oil (for frying or baking)

Instructions
 

Preheat the Oven (if baking): If you prefer to bake the nuggets, preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. If frying, heat olive oil in a large skillet over medium heat.

    Prepare the Zucchini: Grate the zucchinis using a box grater and place them in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to avoid soggy nuggets.

      Mash the Chickpeas: In a large mixing bowl, add the drained chickpeas and mash them gently with a fork or potato masher until mostly smooth but still slightly chunky.

        Combine Ingredients: To the mashed chickpeas, add the grated zucchini, rolled oats, Parmesan cheese (or nutritional yeast), chopped parsley, minced garlic, onion powder, smoked paprika, ground cumin, salt, and pepper. Mix until all ingredients are well combined.

          Form the Nuggets: With your hands, form small patties (about 1.5 inches in diameter) from the mixture. If the mixture is too wet, sprinkle in some flour to help bind it.

            Cook the Nuggets:

              - Baking: Place the formed nuggets on the prepared baking sheet. Brush lightly with olive oil and bake for 20-25 minutes, flipping halfway, until golden brown and crisp.

                - Frying: For frying, gently place the nuggets into the hot olive oil. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

                  Serve: Serve warm with your favorite dipping sauce, such as tzatziki or sriracha mayo, and enjoy your deliciously crispy zucchini chickpea nuggets!
