Zucchini Bread Breakfast Casserole

3 cups grated zucchini (about 2 medium zucchinis)

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

4 large eggs

1 tsp vanilla extract

1 tsp baking soda

½ tsp baking powder

1 tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp salt

1 cup chopped walnuts or pecans (optional)

1 cup shredded carrots (optional)

1 cup raisins or chocolate chips (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easier removal.

    Prepare Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt until well combined.

        Combine Wet Ingredients: In a separate bowl, beat the eggs lightly. Add in the vegetable oil and vanilla extract, mixing until blended.

          Combine Mixtures: Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the grated zucchini, walnuts or pecans (if using), shredded carrots (if using), and raisins or chocolate chips (if using) until evenly distributed.
