Zucchini Bolognese with Pasta

2 medium zucchinis, finely diced

1 medium onion, chopped

3 cloves garlic, minced

1 carrot, grated

1 red bell pepper, diced

1 can (15 oz) crushed tomatoes

2 tablespoons tomato paste

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust to taste)

1 tablespoon olive oil

Salt and pepper, to taste

12 oz whole grain or gluten-free pasta

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 2-3 minutes until fragrant and onion is translucent.

      Add the Other Veggies: Stir in the grated carrot and diced red bell pepper. Cook for an additional 3-4 minutes until the peppers start to soften.

        Incorporate Zucchini: Add the diced zucchini to the skillet, sautéing for around 5-6 minutes. The zucchini should become tender but not mushy—season with salt and pepper.

          Create the Sauce: Stir in the crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes. Bring the sauce to a gentle simmer. Reduce heat to low and let it cook for about 15 minutes, stirring occasionally. If the sauce seems too thick, add a splash of reserved pasta water.

            Combine with Pasta: Once the sauce has thickened and the flavors have melded together, add the cooked pasta to the skillet. Toss everything together so that the pasta is well coated with the zucchini Bolognese. Adjust seasoning with more salt or pepper if desired.
