2 medium zucchinis, grated

1 can (15 oz) black beans, drained and rinsed

1 cup cooked quinoa

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (plus more for cooking)

Optional: 1/4 cup shredded cheese (e.g., cheddar or vegan alternative)

Instructions
 

Prep the Zucchini: Grate the zucchinis using a box grater. Place them in a clean kitchen towel or cheesecloth and squeeze out excess moisture. This is vital to prevent the burgers from being too watery.

    Mash the Beans: In a large mixing bowl, add the drained black beans. Use a fork or a potato masher to mash them until they’re mostly smooth but still have some texture.

      Combine Ingredients: Add the grated zucchini, cooked quinoa, breadcrumbs, red onion, minced garlic, parsley, cumin, smoked paprika, salt, and pepper to the mashed beans. If you’re using cheese, add it now.

        Mix Well: Use your hands or a spatula to mix all the ingredients until they are well combined. If the mixture feels too wet, you can add a little more breadcrumbs.

          Form the Patties: Divide the mixture into equal portions (about 6-8 patties) and shape them into burger-sized rounds. If the mixture is too sticky, wet your hands slightly to make shaping easier.

            Chill the Patties: Place the formed patties on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes. This will help them firm up and hold together better while cooking.
