2 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup shredded mozzarella cheese, divided

1 egg, beaten

1/4 cup fresh basil, chopped

1 teaspoon garlic powder

Salt and pepper to taste

2 cups marinara sauce (store-bought or homemade)

Olive oil for brushing

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Wash and trim the ends of the zucchinis. Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin strips (about 1/8 inch thick).

    Salt the Zucchini: Lay the zucchini slices on a clean dish towel and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture. After 10 minutes, pat them dry with another towel.

      Make the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, half of the shredded mozzarella cheese, beaten egg, chopped basil, garlic powder, salt, and pepper. Mix well to combine.

        Roll the Zucchini: Take one zucchini slice and place about a tablespoon of the ricotta filling at one end. Roll it up gently and place it seam-side down in a baking dish. Repeat this step for all the zucchini slices and filling.

          Prepare the Marinara: Spread a thin layer of marinara sauce on the bottom of the baking dish to prevent sticking. Place the zucchini roll-ups on top in a single layer. Cover the roll-ups with the remaining marinara sauce and sprinkle the rest of the shredded mozzarella cheese on top.

            Bake: Brush the top of the roll-ups with a little olive oil for a golden finish. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

              Serve: Allow the dish to cool for a few minutes before serving. Garnish with extra fresh basil if desired.
