Ingredients

4 medium zucchinis

1 cup heavy cream

2 tablespoons unsalted butter

3 cloves garlic, minced

1 cup freshly grated Parmesan cheese

1/2 teaspoon salt (to taste)

1/4 teaspoon black pepper (to taste)

1/4 teaspoon nutmeg (freshly grated, optional)

Fresh parsley, chopped (for garnish)

Cherry tomatoes, halved (optional for garnish)

Instructions

Prepare the Zoodles: Using a spiralizer, create zoodles (zucchini noodles) from the zucchinis. If you don’t have a spiralizer, you can use a vegetable peeler to create thin ribbons. Set the zoodles aside.

Make the Alfredo Sauce: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, stirring often to prevent burning.

Add Cream: Pour in the heavy cream and stir gently. Raise the heat to medium-high and allow the cream to simmer for about 2-3 minutes until it slightly thickens.

Incorporate Cheese: Gradually add the grated Parmesan cheese into the cream mixture, whisking constantly until fully melted and the sauce is creamy and smooth. Adjust the salt and pepper according to your taste, and stir in the nutmeg if using. Remove from heat.

Cook the Zoodles: In a separate pot of boiling salted water, briefly blanch the zoodles for 1-2 minutes. This helps to soften them slightly while keeping their crunch. Drain and quickly rinse with cold water to stop the cooking process.

Combine: Add the blanched zoodles to the Alfredo sauce in the skillet. Toss gently until the zoodles are well coated with the sauce. You can add more salt and pepper if needed.

Serve and Garnish: Plate the zoodle Alfredo and garnish with chopped fresh parsley and halved cherry tomatoes for a pop of color.

Enjoy! Dig into your creamy Zoodle Alfredo delight and savor the fresh flavors!
