4 cups fresh corn kernels (about 6 ears of corn)

1 medium onion, diced

2 cloves garlic, minced

2 medium potatoes, diced

1 red bell pepper, diced

1 can (14 oz) coconut milk

4 cups vegetable broth

2 tbsp olive oil

1 tsp smoked paprika

1 tsp cayenne pepper (adjust to taste)

1 tsp dried thyme

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Sauté Aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sautéing until the onions are translucent, about 4-5 minutes.

    Add Vegetables: Stir in the diced potatoes and red bell pepper. Cook for an additional 5 minutes, allowing them to soften.

      Incorporate Corn and Broth: Add the fresh corn kernels and vegetable broth to the pot. Bring to a gentle simmer and cook for about 15 minutes, or until the potatoes are tender.

        Spice it Up: Stir in the smoked paprika, cayenne pepper, dried thyme, salt, and pepper. Adjust the spices according to your taste preference.
