1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Zest of 1 lime

3 tablespoons olive oil

1 teaspoon ground cumin

1 garlic clove, minced

Salt and black pepper to taste

1/2 teaspoon red pepper flakes (optional for heat)

Mixed greens or arugula, for serving

Instructions
 

Prepare the Shrimp: In a medium bowl, combine shrimp, lime juice, lime zest, olive oil, cumin, garlic, salt, pepper, and red pepper flakes (if using). Let it marinate for about 15 minutes while you prep the other ingredients.

    Cook the Shrimp: In a large skillet over medium-high heat, add the marinated shrimp. Cook for 2-3 minutes on each side or until they are pink and opaque. Remove from heat and let cool slightly.

      Combine Ingredients: In a large bowl, add the diced avocados, cherry tomatoes, red onion, and cilantro. Gently toss to combine.

        Add the Shrimp: Once the shrimp has cooled, add it to the avocado and tomato mixture. Carefully mix to combine all the ingredients without mashing the avocado.

          Season: Adjust the seasoning with additional salt, pepper, or lime juice if desired.
