1 cup long-grain white rice

2 cups vegetable broth (or water)

Zest of 1 lime

Juice of 2 limes

1/4 cup fresh cilantro, finely chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Optional: 1/4 teaspoon crushed red pepper flakes for heat

Instructions
 

Rinse the Rice: Start by rinsing the rice under cold water in a fine-mesh strainer until the water runs clear. This step removes excess starch and helps achieve fluffier rice.

    Cook the Rice: In a medium saucepan, combine the rinsed rice and vegetable broth (or water). Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15-20 minutes or until the rice is cooked and liquid is absorbed.

      Fluff the Rice: After the cooking time is up, remove the saucepan from heat. Let it sit, covered, for an additional 5 minutes. After that, use a fork to fluff the rice gently.

        Add Flavorings: In a small bowl, mix together the olive oil, lime zest, lime juice, garlic powder, salt, and black pepper. If you're using crushed red pepper flakes, add them here as well.

          Combine: Pour the lime mixture over the fluffed rice and add the chopped cilantro. Gently toss everything together until well combined, ensuring the rice is evenly coated with the zesty dressing.
