1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

2 cloves garlic, minced

1 jalapeño, seeded and diced (adjust to taste)

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Juice of 1 lime

Salt and pepper to taste

8 small corn or flour tortillas

Fresh cilantro, chopped (for garnish)

Avocado or guacamole (for serving)

Crumbled queso fresco or feta cheese (optional, for serving)

Instructions
 

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and diced jalapeño, cooking for an additional 1-2 minutes until fragrant.

    Add Beans and Corn: Stir in the drained black beans and corn kernels. Add the ground cumin, chili powder, salt, and pepper. Mix well to combine, and let cook for 5-7 minutes, stirring occasionally, until everything is heated through.

      Add Lime Juice: Remove the skillet from heat and squeeze the fresh lime juice over the mixture. Stir to incorporate and adjust seasoning if needed.

        Warm the Tortillas: In a separate dry skillet over medium heat, warm the tortillas for about 30 seconds on each side until they are pliable but not crispy. Alternatively, wrap them in a damp paper towel and microwave for 20-30 seconds.
