Zesty BBQ Cauliflower Cheddar Wraps

1 medium head of cauliflower, cut into florets

1 cup BBQ sauce (store-bought or homemade)

1 cup shredded sharp cheddar cheese

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tbsp olive oil

Salt and pepper to taste

4 large flour or whole wheat tortillas

1 cup fresh spinach or mixed greens

1 ripe avocado, sliced

Optional: sliced jalapeños for extra heat

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper until evenly coated.

      Roast Cauliflower: Spread the seasoned cauliflower onto the prepared baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, or until the cauliflower is tender and lightly browned, tossing halfway through for even cooking.

        Add BBQ Sauce: Remove the cauliflower from the oven and drizzle ½ cup of BBQ sauce over the roasted florets. Toss to coat evenly and return to the oven for an additional 10 minutes, allowing the BBQ sauce to set and caramelize slightly.

          Warm Tortillas: While the cauliflower is finishing in the oven, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, just until pliable.

            Assemble Wraps: Once the cauliflower is ready, remove it from the oven and let it cool slightly. On each tortilla, layer a generous handful of fresh spinach, followed by the BBQ cauliflower, shredded cheddar cheese, and avocado slices.

              Fold and Serve: Carefully fold the sides of each tortilla inwards, then roll from the bottom to form a wrap. Serve immediately with the remaining BBQ sauce on the side for dipping. If desired, top with sliced jalapeños for an extra kick of heat.
