Ingredients

1 lb ground beef (or veal for a richer flavor)

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 medium carrot, finely diced

1 celery stalk, finely diced

1 cup button mushrooms, finely chopped

1 cup dry white wine (such as Pinot Grigio)

1 cup whole milk

1 cup heavy cream

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (for serving)

Instructions

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion, garlic, carrot, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and the onion is translucent.

Brown the Meat: Increase the heat to medium-high, add the ground beef (or veal), and cook until browned, breaking it up with a wooden spoon as you go. This should take about 8-10 minutes. Drain any excess fat.

Add Mushrooms: Stir in the chopped mushrooms and cook for an additional 3-4 minutes until they are tender.

Deglaze with Wine: Pour in the dry white wine and bring to a simmer. Scrape the bottom of the skillet to release any flavorful bits. Allow the wine to reduce for about 5 minutes until it has mostly evaporated.

Incorporate Dairy: Lower the heat to medium-low and stir in the whole milk and heavy cream. Add the dried oregano, dried thyme, salt, and pepper. Simmer gently for about 20-25 minutes, stirring occasionally, until the sauce is thick and creamy.

Adjust Seasoning: Taste the sauce and adjust the seasoning with more salt and pepper as needed. If the sauce is too thick, you can add a splash of milk or cream to reach your desired consistency.

Serve: Serve the white Bolognese sauce over your favorite pasta. Garnish with freshly chopped parsley and a generous sprinkle of grated Parmesan cheese.

Enjoy: Dig in and enjoy the creamy, rich flavors of your homemade white Bolognese sauce!
