Ingredients
  

For the Cookie Crumble:

1 cup of all-purpose flour

1/2 cup of brown sugar

1/4 cup of granulated sugar

1/2 teaspoon of baking soda

1/4 teaspoon of salt

1/2 cup (1 stick) of unsalted butter, softened

1 teaspoon vanilla extract

1 cup chocolate chips (mini for the eyes)

For the Blue Vanilla Cake:

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 cup buttermilk

1 teaspoon vanilla extract

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Blue food coloring (as desired)

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2-3 tablespoons heavy cream

Blue and black food coloring

For Garnish:

Crushed chocolate cookies (for topping)

Gummy eyes

Additional mini chocolate chips

Instructions
 

Make the Cookie Crumble:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, whisk together flour, brown sugar, granulated sugar, baking soda, and salt.

        - Add softened butter and vanilla extract, mix until crumbly. Then fold in chocolate chips.

          - Spread mixture onto a baking sheet lined with parchment paper and bake for 10-12 minutes until slightly golden. Set aside to cool.

            Prepare the Blue Vanilla Cake:

              - In a large bowl, cream together softened butter and sugar until light and fluffy.

                - Beat in the eggs, followed by buttermilk and vanilla extract.

                  - In another bowl, combine flour, baking powder, baking soda, and salt. Gradually add the dry mix to the wet mix, combining until just incorporated. Add blue food coloring until your desired shade is achieved.

                    - Divide the batter into greased cupcake tins or a baking pan and bake at 350°F (175°C) for 20-25 minutes or until a cake tester comes out clean. Allow to cool completely before crumbling.

                      Make the Frosting:

                        - In a large mixing bowl, whip the softened butter until creamy.

                          - Gradually add powdered sugar, vanilla extract, and heavy cream until it reaches a smooth, spreadable consistency.

                            - Divide the frosting into two bowls. Tint one bowl with blue food coloring and the other with black food coloring for decoration.

                              Assemble the Cake Jars:

                                - Using a jar or glass, layer the components starting with a layer of blue cake crumbles, followed by a layer of cookie crumble, and a dollop of blue frosting. Repeat the layers until you fill the jar to the top, leaving a little space for decoration.

                                  Decorate the Cake Jars:

                                    - Using a piping bag, pipe a swirl of black frosting on top of each cake jar to represent Cookie Monster’s mouth.

                                      - Add crushed chocolate cookies on top as dirt, place gummy eyes, and scatter a few mini chocolate chips for fun!

                                        Serve and Enjoy!

                                          - Chill your jars for about 30 minutes before serving for the best structure and flavor.
