Ingredients

2 cups rolled oats

1 cup raw pumpkin seeds (pepitas)

1/2 cup almonds, chopped

1/2 cup dried cranberries

1/2 cup nut butter (such as almond or peanut butter)

1/2 cup pure pumpkin puree

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ginger

1/4 teaspoon allspice

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional but recommended)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8 inch (20x20 cm) baking pan with parchment paper, allowing some overhang for easy removal later.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, pumpkin seeds, chopped almonds, dried cranberries, cinnamon, nutmeg, ginger, allspice, and salt. Stir well to ensure the spices are evenly distributed.

Prepare Wet Ingredients: In a separate medium bowl, mix together the nut butter, pumpkin puree, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the large bowl with the dry ingredients. Using a spatula or your hands, mix everything together until fully combined. If you like some sweetness, fold in the mini chocolate chips.

Transfer to Baking Pan: Pour the mixture into the prepared baking pan. Press down firmly with your fingers or the back of a spatula to create an even layer. This step is crucial for ensuring the bars hold together well.

Bake the Granola Bars: Place the baking pan in the preheated oven and bake for about 20-25 minutes, or until the edges are golden brown. Keep an eye on them to prevent burning.

Cool and Slice: Once baked, remove from the oven and let cool in the pan for at least 10 minutes. Then, use the parchment overhang to lift the entire slab out of the pan and let it cool on a wire rack for an additional 30 minutes. Once completely cooled, slice into bars or squares.

Store: Enjoy your granola bars immediately or store them in an airtight container at room temperature for up to one week, or in the refrigerator for longer freshness.
