Warm Persimmon Summer Salad

2 ripe Fuyu persimmons, thinly sliced

4 cups mixed greens (arugula, spinach, and baby kale)

1 cup pomegranate seeds

1/2 cup crumbled feta cheese

1/4 cup toasted walnuts, roughly chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Salt and pepper to taste

1/2 teaspoon chili flakes (optional)

Fresh mint leaves for garnish

Instructions
 

Prepare the Persimmons: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced persimmons and sauté for about 3-5 minutes, just until they begin to soften and caramelize slightly. Remove from heat and set aside.

    Mix the Dressing: In a small bowl, whisk together the balsamic vinegar, honey, Dijon mustard, remaining olive oil, salt, pepper, and chili flakes (if using) until well combined. Adjust seasoning as necessary.

      Assemble the Salad: In a large mixing bowl, combine the mixed greens with the warm sautéed persimmons, pomegranate seeds, and toasted walnuts. Drizzle with the prepared dressing and toss gently to coat all the ingredients evenly.
