1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/4 cup coconut oil, melted (or unsalted butter)

1 large egg

1 cup unsweetened applesauce

1/2 cup milk (dairy or plant-based)

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1 cup diced fresh apples (about 2 medium apples)

Optional: 1/2 cup walnuts or pecans, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with paper liners.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well until evenly combined.

      Mix Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, egg, applesauce, milk, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

          Add Apples and Nuts: Gently fold in the diced apples and, if using, the chopped walnuts or pecans to the batter.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

              Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature!
