2 cups cooked chickpeas (canned or boiled)

2 medium-sized potatoes, diced into small cubes

1 cup cherry tomatoes, halved

1 medium red bell pepper, diced

1 small red onion, diced

1 cup fresh spinach or kale, chopped

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Optional: Lemon wedges for serving

Prepare the Potatoes: In a medium pot, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until they are fork-tender but not mushy. Drain and set aside.

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced red onion and bell pepper. Sauté for about 3-4 minutes until they start to soften.

      Add Spices and Chickpeas: Stir in the cooked chickpeas, smoked paprika, ground cumin, garlic powder, salt, and pepper. Cook for an additional 5 minutes, stirring occasionally.

        Combine Ingredients: Gently fold the cooked potatoes into the chickpea and vegetable mixture. Add the cherry tomatoes and spinach (or kale) and cook for another 3-4 minutes, just until the greens are wilted and the tomatoes are slightly warmed.
