2 cups mixed bell peppers (red, yellow, green), sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

1 small zucchini, sliced into half-moons

1 cup baby corn, halved

3 cloves garlic, minced

1-inch ginger, grated

2 tablespoons vegetable oil (or sesame oil)

4 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch (optional, for thickening)

¼ cup water (if using cornstarch)

Sesame seeds, for garnish

Chopped green onions, for garnish

Cooked rice or noodles, to serve

Prep the Vegetables: Wash and slice all vegetables as indicated. Make sure everything is ready before starting to cook, as stir-frying goes quickly.

    Make Teriyaki Sauce: In a small bowl, whisk together soy sauce, teriyaki sauce, rice vinegar, and cornstarch (if using). Set aside.

      Heat Oil: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

        Stir-Fry the Aromatics: Add minced garlic and grated ginger to the pan, stirring continuously for about 30 seconds until fragrant.

          Stir-Fry the Veggies: Add the mixed bell peppers, broccoli, snap peas, carrots, zucchini, and baby corn to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

            Add Sauce: Pour the teriyaki sauce mixture over the stir-fried vegetables. If using cornstarch, stir well to combine, and add water if you prefer a thinner sauce. Allow it to simmer for an additional 2-3 minutes, stirring continuously, until the sauce thickens.

              Garnish & Serve: Remove from heat and sprinkle with sesame seeds and chopped green onions. Serve immediately over cooked rice or noodles.
