1 medium zucchini (about 1 cup grated)

1 cup all-purpose flour (or gluten-free flour if desired)

1/2 cup unsweetened cocoa powder

1/2 cup coconut sugar (or brown sugar)

1/2 cup maple syrup

1/4 cup unsweetened applesauce

1/4 cup melted coconut oil (or any neutral oil)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/4 teaspoon salt

1/2 cup dairy-free chocolate chips (optional)

A pinch of cinnamon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or lightly grease it with coconut oil.

    Prepare the Zucchini: Wash the zucchini thoroughly, trim the ends, and grate it using a box grater. Use a clean kitchen towel to squeeze out excess moisture from the grated zucchini, ensuring your batter isn’t too wet.

      Mix Dry Ingredients: In a large mixing bowl, combine the flour, cocoa powder, coconut sugar, baking soda, baking powder, salt, and cinnamon (if using). Whisk together until well combined.

        Combine Wet Ingredients: In a separate bowl, mix the grated zucchini, maple syrup, applesauce, melted coconut oil, and vanilla extract. Stir until everything is well blended.

          Combine Dry and Wet Mixtures: Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to over-mix. If using, fold in the dairy-free chocolate chips.
