Ingredients

1 lb ground beef (or turkey for a lighter option)

1 small onion, finely chopped

1 small green bell pepper, finely chopped

2 cloves garlic, minced

1 cup ketchup

2 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp chili powder

1 tsp smoked paprika

Salt and pepper, to taste

8 slices of bread (Texas toast or thick-cut white bread recommended)

8 slices of your favorite cheese (American, cheddar, or a blend)

4 tbsp butter (for grilling)

Instructions

Cook the Meat Mixture: In a large skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.

Sauté Onions and Peppers: Add chopped onion and green bell pepper to the pan. Sauté until soft, about 3-4 minutes. Stir in the garlic and cook for an additional minute until fragrant.

Make the Sloppy Joe Sauce: Reduce the heat and add ketchup, Worcestershire sauce, brown sugar, chili powder, smoked paprika, salt, and pepper to the meat mixture. Mix well and let it simmer for about 5-10 minutes, stirring occasionally, until thickened.

Prepare for Grilling: While the sloppy joe mixture is simmering, butter one side of each slice of bread.

Layer the Sandwich: On the non-buttered side of 4 slices, place a generous portion of the sloppy joe mixture followed by 2 slices of cheese. Top with the other 4 slices of bread, buttered side up.

Grill the Sandwiches: In a large skillet or griddle, place the sandwiches over medium heat. Cook for about 4-5 minutes on each side, pressing down occasionally, until golden brown and the cheese has melted.

Serve: Once the sandwiches are grilled to perfection, remove from heat. Allow them to sit for a minute before slicing in half. Serve immediately with your favorite pickles or potato chips on the side.
