12 oz fettuccine pasta

2 chicken breasts, boneless and skinless

2 tablespoons olive oil

Salt and pepper, to taste

3 cloves garlic, minced

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh basil for garnish, optional

Cook the Fettuccine: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain and set the pasta aside.

    Prepare the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, heat the olive oil. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Sauté the Vegetables: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Then, stir in the fresh spinach and cook until wilted.

        Make the Alfredo Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the Parmesan cheese and Italian seasoning. Mix until the cheese is melted and the sauce is smooth. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.
