Turkey Chili and Cheese Mini Sliders

For the Turkey Chili:

1 lb ground turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp chili powder

1 tsp cumin

1 tsp paprika

½ tsp salt

½ tsp black pepper

1 cup chicken broth

2 tbsp olive oil

For the Sliders:

12 slider buns

1 cup shredded cheddar cheese

2 tbsp chopped fresh cilantro (optional, for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Prepare the Turkey Chili:

    - In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

      - Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.

        - Stir in the chili powder, cumin, paprika, salt, and black pepper, cooking for another minute to toast the spices.

          - Add the kidney beans, black beans, diced tomatoes (with juices), and chicken broth. Bring to a simmer, then reduce the heat to low. Let the chili simmer for about 20-30 minutes, stirring occasionally, until thickened.

            Prepare the Sliders:

              - Preheat your oven to 350°F (175°C).

                - Slice the slider buns in half and place the bottoms onto a baking sheet.

                  - Spoon a generous amount of the turkey chili onto each slider bottom. Top with a handful of shredded cheddar cheese.

                    - Place the tops of the slider buns over the cheese, gently pressing down.

                      Bake the Sliders:

                        - Bake the assembled sliders in the preheated oven for about 10-12 minutes, or until the buns are toasted and the cheese is melted and bubbly.

                          Serve:

                            - Remove the sliders from the oven and let them cool for a couple of minutes. Optionally, garnish with chopped cilantro and sliced jalapeños for an extra kick.
