1 block extra-firm tofu (14 oz), pressed and drained

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Fresh lime juice (from 1 lime)

For the Cherry Slaw:

1 cup fresh cherries, pitted and sliced

2 cups green cabbage, thinly sliced

1 small red onion, finely chopped

1 carrot, grated

2 tablespoons fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

Salt to taste

For Assembly:

Corn or flour tortillas (8 small)

Fresh avocado slices (optional)

Lime wedges for serving

Prepare the Tofu:

    Begin by slicing the pressed tofu into small cubes. In a mixing bowl, combine olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Add the tofu cubes and gently toss to coat them evenly with the spice mixture. Let it marinate for about 10-15 minutes.

      Cook the Tofu:

        Heat a non-stick skillet over medium-high heat. Add the marinated tofu and cook for about 8-10 minutes, turning occasionally until all sides are crisp and golden brown. Squeeze fresh lime juice over the tofu just before removing from heat.

          Prepare the Cherry Slaw:

            In a large bowl, mix the sliced cherries, cabbage, red onion, grated carrot, and cilantro. In a separate small bowl, whisk together the apple cider vinegar, honey (or agave), and a pinch of salt. Drizzle the dressing over the slaw mixture and toss well to combine.               Warm the Tortillas:
