Ingredients

3 cups rolled oats

1 cup sliced almonds

1 cup unsweetened shredded coconut

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

1/2 cup dried fruit (such as cranberries or apricots), optional

1/2 cup dark chocolate chips, optional

Instructions

Preheat Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper to prevent sticking.

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, sliced almonds, shredded coconut, cinnamon, and sea salt. Mix well to ensure even distribution.

Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients over the dry ingredients. Stir until all the oats and nuts are evenly coated. The mixture should be slightly sticky.

Spread on Baking Sheet: Pour the granola mixture onto the prepared baking sheet. Use a spatula to spread it out evenly in a single layer. Press down slightly for clumping.

Bake: Bake in the preheated oven for about 25-30 minutes, stirring halfway through to ensure even toasting. The granola should be golden brown and fragrant.

Cool and Add Extras: Remove from the oven and let the granola cool completely on the baking sheet. Once cool, mix in the dried fruit and dark chocolate chips if desired.

Store: Transfer the granola to an airtight container or jar. It can be stored at room temperature for up to two weeks.

Serve: Enjoy this delicious granola with yogurt, milk, or as a snack on its own!
