Ingredients

3 cups rolled oats

1 cup slivered almonds

1 cup shredded unsweetened coconut

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 tsp vanilla extract

1/2 tsp sea salt

1 tsp ground cinnamon

1/2 cup dried fruit (like cranberries, apricots, or cherries) - optional

1/2 cup chocolate chips or cacao nibs - optional

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.

Mix Dry Ingredients: In a large bowl, combine the rolled oats, slivered almonds, shredded coconut, sea salt, and ground cinnamon. Stir until well mixed.

Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture over the dry ingredients. Stir well until all the oats and nuts are evenly coated.

Spread and Bake: Spread the granola mixture evenly on the prepared baking sheet. Use a spatula to press it down gently, which will help it clump together during baking.

Bake: Bake in the preheated oven for about 20-25 minutes, stirring halfway through to ensure even toasting. Keep an eye on it to avoid burning; the granola should be golden brown.

Cool and Add Extras: Once done, remove the baking sheet from the oven and allow the granola to cool completely. If you're adding dried fruit or chocolate chips, stir them in once the granola has cooled.

Store: Once cooled, transfer the granola to an airtight container. It can be stored at room temperature for up to two weeks.

Serve: Enjoy your toasty almond coconut granola as a breakfast cereal with milk or yogurt, or as a delicious topping for smoothie bowls or desserts!
