Ingredients

1 lb (450g) sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh rosemary, finely chopped (or ½ teaspoon dried rosemary)

Salt and pepper, to taste

1 tablespoon olive oil

1 teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Steak: Pat the steak cubes dry with paper towels and season generously with salt and pepper on all sides. This step ensures a good sear.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Ensure the pan is hot before adding the steak.

Sear the Steak: Add the steak bites in a single layer, avoiding overcrowding the pan. Sear for about 2-3 minutes on one side until a golden crust forms, then flip and cook for another 2-3 minutes for medium-rare (adjust cooking time based on your preferred doneness). Remove the steak bites from the pan and set aside.

Make the Garlic Butter: In the same skillet, reduce the heat to medium. Add the butter and allow it to melt, scraping up any browned bits left in the pan. Add the minced garlic, thyme, and rosemary, stirring continually for about 1-2 minutes until the garlic becomes fragrant (be careful not to burn it).

Combine Steak and Sauce: Return the steak bites to the skillet with the garlic butter. If you’re using red pepper flakes, sprinkle them in at this stage. Toss everything together ensuring the steak is well coated with the garlic butter sauce. Cook for an additional 1-2 minutes to heat through.

Garnish and Serve: Remove from heat, sprinkle with freshly chopped parsley, and serve immediately with lemon wedges on the side. Squeeze fresh lemon juice over the steak bites for an extra burst of flavor!
