2 cups cooked jasmine rice (preferably day-old)

1 cup blue crab meat (fresh or canned, drained)

3 tbsp vegetable oil

3 cloves garlic, minced

1 small onion, diced

2 eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3-4 green onions, chopped

2 tbsp soy sauce

1 tbsp fish sauce

1 tsp sugar

1/2 tsp white pepper

Juice of 1 lime

Fresh cilantro, for garnish

Lime wedges, for serving

Prepare the Ingredients: If using fresh crab, ensure it's cleaned and meat is removed from the shell. If using canned, make sure it’s drained and flaked. Day-old rice works best to prevent mushiness.

    Heat the Oil: In a large wok or a non-stick skillet, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the minced garlic and diced onion to the pan. Stir-fry for 1-2 minutes until fragrant and the onion is translucent.

        Add the Crab: Gently fold in the crab meat, being careful not to break up the lumps too much. Sauté for another 2-3 minutes.

          Scramble the Eggs: Push the crab mixture to one side of the wok. Pour the beaten eggs into the empty side and scramble until light and fluffy, then mix with the crab.

            Incorporate Vegetables and Rice: Add the mixed vegetables to the pan, stir-frying for another 2 minutes. Then add the day-old rice, breaking up any clumps gently with a spatula.

              Season the Rice: Pour in the soy sauce, fish sauce, sugar, and white pepper. Toss everything thoroughly until the rice is evenly coated and heated through.
