Ingredients

2 medium sweet potatoes, peeled and diced

1 tablespoon olive oil

1 medium red onion, diced

1 red bell pepper, chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

Salt and pepper, to taste

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Sweet Potatoes: In a large skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and cook, stirring occasionally, for about 10 minutes or until they start to soften.

Add Aromatics: Stir in the diced red onion and red bell pepper. Cook for another 5-7 minutes until the vegetables are tender and the onion becomes translucent.

Seasoning It Up: Add the minced garlic, ground cumin, smoked paprika, and chili powder. Stir well and cook for another 1-2 minutes until fragrant.

Mix in Beans and Corn: Add the black beans and corn to the skillet, stirring until everything is well combined. Season with salt and pepper to taste, and let it cook for another 3-5 minutes, allowing the flavors to meld together.

Final Touches: Remove the skillet from heat. Top with diced avocado and chopped cilantro.

Serve: Serve warm with lime wedges on the side for squeezing over the dish. Enjoy your tasty Tex-Mex Sweet Potato Skillet!
