14 oz firm tofu, pressed and sliced into 1-inch thick steaks

1 cup fresh parsley, finely chopped

1/2 cup fresh basil, finely chopped

2 cloves garlic, minced

1 tbsp lemon zest

1/4 cup nutritional yeast

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup olive oil

Salt and pepper to taste

1 tbsp balsamic vinegar (optional)

Lemon wedges for serving

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Wrap the tofu in a clean kitchen towel or paper towels, place it on a plate, and put a heavy object on top for about 30 minutes.

    Make the Herb Mixture: In a medium bowl, combine the chopped parsley, basil, minced garlic, lemon zest, nutritional yeast, breadcrumbs, and a pinch of salt and pepper. Mix well until fully combined.

      Coat the Tofu: Preheat your oven to 400°F (200°C). Brush each tofu steak lightly with olive oil on both sides. Press the tofu into the herb mixture, ensuring each piece is generously coated.

        Bake the Tofu: Arrange the coated tofu steaks on a baking sheet lined with parchment paper. Drizzle a bit more olive oil over the top if desired. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

          Optional Glaze: If you want an extra layer of flavor, mix the balsamic vinegar with a little olive oil and brush it over the tofu steaks right before they finish baking.

            Serve: Once baked, remove from the oven and allow them to cool for a few minutes. Serve hot with lemon wedges on the side for an extra zing.
