Ingredients

1 ½ lbs flank steak, cut into 1-inch cubes

¼ cup unsalted butter, softened

2 tablespoons fresh parsley, finely chopped

2 tablespoons fresh basil, finely chopped

1 tablespoon fresh thyme, finely chopped

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

1 teaspoon black pepper

1 teaspoon salt

½ teaspoon smoked paprika

1 tablespoon olive oil

Skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

Marinate the Steak: In a large bowl, combine the soy sauce, Worcestershire sauce, black pepper, salt, and smoked paprika. Add the flank steak cubes and mix well until the steak is evenly coated. Let the steak marinate for at least 30 minutes up to 2 hours in the refrigerator for maximum flavor.

Make the Herb Butter: In a small bowl, mix the softened butter with fresh parsley, basil, thyme, and minced garlic until well combined. Transfer the mixture onto a piece of parchment paper, roll it into a log, and refrigerate until firm, about 30 minutes.

Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. While it's heating, thread the marinated steak cubes onto the skewers, leaving a little space between each piece for even cooking.

Grill the Skewers: Brush the skewers with olive oil and place them on the hot grill. Cook for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer for best results (130°F for medium-rare).

Add the Herb Butter: During the last minute of grilling, add a generous slice of the herb butter on top of each skewer. Close the grill lid to melt the butter over the steak and infuse it with flavor.

Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve warm, drizzled with any remaining melted herb butter.
