1 lb (450g) flank steak, cut into 1-inch cubes

1/4 cup unsalted butter, softened

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

2 tablespoons balsamic vinegar

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into wedges

Skewers (soaked in water for 30 minutes if wooden)

Instructions
 

Prepare the Herb Butter: In a small bowl, combine the softened butter, chopped rosemary, thyme, minced garlic, smoked paprika, salt, and black pepper. Mix until all ingredients are well integrated. Place the herb butter in the fridge to firm up while you prepare the skewers.

    Marinate the Steak: In a large bowl, combine the olive oil and balsamic vinegar. Add the flank steak cubes and toss to coat them evenly. Cover and let this marinate in the fridge for at least 30 minutes (up to 2 hours for deeper flavor).

      Assemble the Skewers: Preheat your grill or grill pan to medium-high heat. Thread the marinated steak cubes onto the skewers, alternating with pieces of red and yellow bell peppers and onion wedges. Aim for about 4-5 pieces of meat per skewer, interspersed with vegetables.

        Grill the Skewers: Place the skewers on the preheated grill. Cook for about 3-4 minutes per side, turning occasionally until the steak reaches your desired doneness (130°F for medium-rare, 145°F for medium). Brush the skewers with herb butter during the last minute of grilling for extra flavor.

          Rest and Serve: Once cooked, remove the skewers from the grill and let them rest for 5 minutes. Serve immediately, drizzled with any remaining herb butter and garnished with extra fresh herbs, if desired.
