12 oz. penne pasta

2 cups marinara sauce (store-bought or homemade)

1 medium zucchini, diced

1 medium bell pepper (red or yellow), diced

1 cup mushrooms, sliced

1 cup spinach, roughly chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and Sauté for 30 seconds until fragrant. Then, add diced zucchini, bell pepper, and mushrooms. Cook for about 5-7 minutes until the vegetables are tender. Stir in the chopped spinach and cook for an additional 2-3 minutes, allowing it to wilt. Season with salt, pepper, and dried Italian herbs.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, marinara sauce, and ricotta cheese. Mix until everything is well combined.

          Assemble the Bake: Spoon half of the pasta mixture into a greased baking dish. Sprinkle half of the mozzarella and Parmesan cheese on top. Pour the remaining pasta mixture over the cheese layer, and then top with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the baking dish with aluminum foil (to prevent burning), and place it in the preheated oven. Bake for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh basil leaves if desired, then serve hot.
