Tangy Pomegranate BBQ Chicken

4 boneless, skinless chicken breasts

1 cup pomegranate juice (preferably pure, no added sugar)

1/2 cup BBQ sauce (your favorite brand)

2 tablespoons honey

2 tablespoons apple cider vinegar

3 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

1 tablespoon olive oil

Fresh pomegranate seeds for garnish

Fresh cilantro or parsley for garnish

Instructions
 

Make the Marinade: In a medium bowl, combine the pomegranate juice, BBQ sauce, honey, apple cider vinegar, minced garlic, smoked paprika, cumin, salt, and pepper. Whisk until well blended.

    Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it's well-coated. Seal the bag or cover the dish. Refrigerate for at least 2 hours, preferably overnight for maximum flavor.

      Preheat the Grill or Oven: Preheat your grill to medium-high heat or preheat your oven to 400°F (200°C).

        Cook the Chicken:

          - For the Grill: Remove the chicken from the marinade and let any excess drip off. Brush the grill grates with olive oil to prevent sticking. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and an internal temperature of 165°F (75°C) is reached.

            - For the Oven: Place the marinated chicken on a lined baking sheet. Bake for 20-25 minutes or until the chicken is cooked through and no longer pink in the center. Optionally, broil for an additional 2-3 minutes to caramelize the top.

              Craving the Sauce: While the chicken is cooking, pour the remaining marinade into a small saucepan. Bring it to a boil over medium heat and then reduce the heat to low.
