Taco Chicken Zoodle Bowls

2 medium zucchinis, spiralized into zoodles

1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 ripe avocado, diced

1/2 cup black beans, rinsed and drained

1/4 cup chopped fresh cilantro

Juice of 1 lime

Optional toppings: sour cream, shredded cheese, sliced jalapeños

Instructions
 

Prepare the Chicken: In a small bowl, mix together the chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture evenly over the chicken breasts.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown and cooked through. Remove from the skillet and allow to rest for a few minutes before slicing.

      Sauté the Zoodles: In the same skillet, add the spiralized zoodles and sauté for 2-3 minutes, just until they are slightly tender but still crisp. Remove from heat.

        Combine Ingredients: In a large bowl, combine the cooked zoodles, cherry tomatoes, corn, diced avocado, black beans, and chopped cilantro. Squeeze lime juice over the mixture and toss gently to combine.

          Plate the Bowls: Divide the zoodle mixture among bowls. Top with sliced chicken breast, and add optional toppings such as sour cream, shredded cheese, and sliced jalapeños if desired.
