1 cup rolled oats

1 cup whole wheat flour

1/2 cup brown sugar

1/2 cup pure pumpkin puree

1/2 cup unsweetened applesauce

1/4 cup milk (or dairy-free alternative)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Optional: 1/2 cup chopped pecans or walnuts

Optional: 1/4 cup chocolate chips or raisins

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Stir until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the pumpkin puree, applesauce, milk, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredient mixture into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay. If you’re adding nuts or chocolate chips, fold them in gently at this stage.

          Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
