2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon cumin

Salt and black pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar or a dairy-free alternative)

½ cup sliced jalapeños (optional for heat)

1 ripe avocado, diced

¼ cup fresh cilantro, chopped

¼ cup sour cream or Greek yogurt (optional)

Lime wedges, for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes thoroughly. Cut them into thin, even slices (about 1/4 inch thick) to ensure they cook evenly.

      Season the Sweet Potatoes: In a large bowl, toss the sweet potato slices with olive oil, paprika, garlic powder, onion powder, cumin, salt, and black pepper until well-coated.

        Bake the Sweet Potatoes: Spread the seasoned sweet potato slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are tender and slightly crisp.

          Layer the Nachos: Once the sweet potatoes are done, remove them from the oven and reduce the oven temperature to 375°F (190°C). Arrange the sweet potato slices on a large baking dish or a parchment-lined baking sheet. Layer on black beans, corn, cherry tomatoes, sliced jalapeños, and top with shredded cheese.

            Melt the Cheese: Return the nachos to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Garnish and Serve: Remove the nachos from the oven and allow them to cool for a few minutes. Just before serving, sprinkle with diced avocado and fresh cilantro. Serve with sour cream or Greek yogurt on the side, and lime wedges for an extra zing.
