2 medium sweet potatoes, peeled and diced

1 cup green or brown lentils, rinsed

1 can (14 oz) coconut milk

1 can (14 oz) diced tomatoes, undrained

1 medium onion, chopped

3 cloves garlic, minced

1-inch piece fresh ginger, grated

2 cups vegetable broth

2 tablespoons red curry paste (adjust to taste)

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 tablespoon soy sauce (or tamari for gluten-free)

2 tablespoons olive oil

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Cooked rice or quinoa, for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Mix in the red curry paste, ground cumin, and turmeric powder. Cook for another minute, allowing the spices to bloom in the heat.

      Incorporate Vegetables and Lentils: Add the diced sweet potatoes and rinsed lentils to the pot, stirring well to coat everything with the spice mixture.
