Sweet Potato and Black Bean Tacos

2 medium sweet potatoes, peeled and diced

1 can (15 oz) black beans, rinsed and drained

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

1 avocado, sliced

1 cup red cabbage, shredded

¼ cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for serving

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare Sweet Potatoes: In a mixing bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, smoked paprika, salt, and pepper until evenly coated.

      Roast Sweet Potatoes: Spread the sweet potato mixture in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly caramelized, stirring halfway through for even cooking.

        Heat Black Beans: While the sweet potatoes are roasting, gently heat the black beans in a small saucepan over medium heat. Season with a pinch of salt and pepper, and warm until heated through, about 5-7 minutes.

          Warm Tortillas: In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until pliable. Alternatively, you can wrap them in foil and warm them in the oven for the last 5 minutes of the sweet potatoes roasting.

            Assemble Tacos: Once everything is ready, take a warm tortilla and fill it with a scoop of roasted sweet potatoes and a spoonful of black beans. Top with sliced avocado, shredded red cabbage, and fresh cilantro.
