Sweet Potato and Black Bean Burrito

Ingredients
  

2 medium sweet potatoes (about 1 pound), peeled and cubed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 small red onion, diced

2 cloves garlic, minced

1/2 cup fresh cilantro, chopped

1 lime, juiced

4 large flour or whole wheat tortillas

1 cup shredded cheese (cheddar or a dairy-free alternative)

Optional toppings: avocado, salsa, sour cream, hot sauce

Instructions
 

Roast the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a baking dish, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, garlic powder, salt, and pepper. Spread them into an even layer and roast for 25-30 minutes, until tender and slightly caramelized. Stir halfway through for even cooking.

    Sauté the Black Beans: While the sweet potatoes are roasting, heat a pan over medium heat. Add a splash of oil, and sauté the diced red onion until translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

      Combine Filling: In a large mixing bowl, combine the roasted sweet potatoes, sautéed onion and garlic, black beans, corn, chopped cilantro, and lime juice. Add salt and pepper to taste and mix until well combined.

        Assemble the Burritos: Lay out one tortilla at a time. Spoon a generous portion of the sweet potato and black bean filling onto the center of each tortilla, leaving space around the edges. Sprinkle with shredded cheese, if desired.

          Fold the Burritos: To wrap, fold in the sides of the tortilla over the filling, then roll from the bottom, tucking the filling in as you go, to form a tight burrito.

            Warm the Burritos (optional): If you like your burritos slightly crispy, heat a skillet over medium heat. Place the burrito seam-side down and cook for about 2-3 minutes on each side until golden brown and crispy.

              Serve: Slice the burritos in half and serve warm, accompanied by your favorite toppings such as avocado, salsa, sour cream, or hot sauce.
