4 boneless, skinless chicken breasts

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup teriyaki sauce

1/4 cup green onions, chopped (plus extra for garnish)

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 cup broccoli florets

1 red bell pepper, sliced

1 cup cooked jasmine rice (for serving)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Marinade: In a mixing bowl, combine teriyaki sauce, minced garlic, grated ginger, and sesame oil. Mix until well incorporated.

      Marinate the Chicken: Place the chicken breasts in a large Ziploc bag or shallow dish and pour half of the marinade over the chicken. Seal the bag or cover the dish, and gently massage it to ensure the chicken is well-coated. Let the chicken marinate in the refrigerator for at least 30 minutes (or up to 2 hours for deeper flavor).

        Assemble the Bake: In a 9x13 inch baking dish, arrange the broccoli florets and red bell pepper slices at the bottom. Place the marinated chicken breasts on top of the vegetables, and distribute the pineapple chunks evenly over the chicken.

          Add the Remaining Marinade: Drizzle the remaining teriyaki marinade over the chicken and vegetables, making sure everything is well-coated.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and has an internal temperature of 165°F (75°C).
