4 cups green cabbage, finely shredded

1 cup carrots, shredded

1/2 cup red bell pepper, thinly sliced

1/2 cup green onions, chopped

1/4 cup mayonnaise

1/4 cup sweet pickle relish

2 tablespoons apple cider vinegar

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon poppy seeds

Salt and pepper to taste

In a large mixing bowl, combine the finely shredded green cabbage, shredded carrots, sliced red bell pepper, and chopped green onions. Toss well to mix all the vegetables evenly.

    In a separate small bowl, whisk together the mayonnaise, sweet pickle relish, apple cider vinegar, honey, Dijon mustard, and poppy seeds until smooth and well combined.

      Pour the dressing over the vegetable mixture. Stir gently until all the vegetables are coated with the dressing.
