2 cups fresh peaches, peeled and diced

1 tablespoon lemon juice

1/4 cup granulated sugar

1 teaspoon cornstarch

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, diced

1/2 teaspoon cinnamon (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easier removal.

    Prepare the Peach Filling: In a medium bowl, combine diced peaches, lemon juice, granulated sugar, cornstarch, and vanilla extract. Toss gently until the peaches are evenly coated and set aside to marinate for about 10 minutes.

      Make the Crust and Crumble Topping: In a large bowl, whisk together flour, oats, brown sugar, baking powder, salt, and cinnamon (if using). Add the cold diced butter to the dry ingredients and use a pastry cutter, fork, or your fingers to mix until the mixture resembles coarse crumbs. Reserve half of this mixture in a separate bowl for the crumble topping.

        Create the Base Layer: Press the remaining crumb mixture firmly into the bottom of the prepared baking pan, creating an even layer. Bake in the preheated oven for 10 minutes, or until lightly golden.
