Ingredients

1 cup fresh or frozen sweet corn kernels

1/2 cup all-purpose flour

1/2 cup cornmeal

1/4 cup grated Parmesan cheese (optional for extra flavor)

1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust according to spice preference)

1/4 cup chopped green onions or scallions

1/4 cup chopped fresh cilantro (or parsley)

2 large eggs

1/3 cup milk (dairy or plant-based)

Vegetable oil for frying

Instructions

Prepare the Mixture: In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and cayenne pepper. Whisk together until well blended.

Add the Corn and Herbs: Gently fold in the sweet corn kernels, chopped green onions, and cilantro (or parsley) into the dry mixture.

Combine Wet Ingredients: In a separate bowl, whisk the eggs and milk together until smooth. Slowly pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix; some lumps are okay.

Heat the Oil: In a large frying pan, heat about 1/4 inch of vegetable oil over medium heat. To test if the oil is hot enough, drop a small spoonful of batter into the pan; it should sizzle immediately.

Fry the Fritters: Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry each fritter for about 2-3 minutes on each side or until they are golden brown and crispy.

Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.

Serve Hot: Serve the fritters warm with a side of sour cream, yogurt, or your favorite dipping sauce. Garnish with extra cilantro or green onions for a burst of color.
